Hot Water Dispenser
The hot water dispenser provides instant hot water for brewing all of our teas. It is one of the most-used pieces of equipment in the shop.
Overview
The dispenser heats and holds a reservoir of water at a set temperature so you always have hot water ready for tea orders. It connects to our water filtration system, so the water is already filtered before it enters the dispenser.
Leave It On Overnight
The hot water dispenser takes a long time to heat a full reservoir (30-45 minutes depending on the model). We leave it powered on overnight. If it gets turned off by accident, turn it back on immediately and allow at least 30-45 minutes before using the water.
Temperature Guide
Different teas need different water temperatures for the best flavor.

Adjusting Temperature
If the dispenser only has one temperature setting (full boil), you can cool the water slightly by letting it sit for 30-60 seconds after dispensing, or by adding a small splash of cold filtered water. This is especially important for matcha and green tea.
Daily Operations
Opening
- Verify the dispenser is on and the water is hot (the indicator light should be on).
- Dispense a small amount of water into a cup to check the temperature. It should be steaming.
- Check the water level. If the reservoir is low, it should auto-refill from the water line. If it does not, check that the water line valve is open.
During Service
- Dispense water as needed for tea orders.
- Keep an eye on the water level indicator. If it drops below the minimum line and is not refilling, let the manager know.
- Do not let the reservoir run completely dry -- this can damage the heating element.
Closing
- Leave the dispenser on. Do not turn it off.
- Wipe down the exterior and the dispensing area with a damp cloth.
- Clean up any water drips around the base.
Monthly Maintenance: Descaling
Mineral buildup (scale) reduces heating efficiency and can affect water taste. Descale once a month or as directed by the manager.
Signs you need to descale:
- Water takes longer than usual to heat up
- White chalky buildup visible around the spout or inside the reservoir
- Water flow from the dispenser is slower than normal
- Water has a slightly off or metallic taste
Manager Task
Descaling involves running a food-safe descaling solution through the system. The manager will handle this or walk you through it. Do not attempt to descale without instructions.
